The Stable to Table cookbook offers recipes from the equestrian world, including the U.S., Europe, North Africa, and South America. Twelve chapters celebrate twelve countries with tasty recipes and stunning photographs representing each country’s horse breeds. All the recipes are fairly easy, not requiring exceptional culinary skills, with full instructions and detailed menus included. The photos of each dish are mouthwatering.

From Kentucky Thoroughbred racing country is a recipe for Kentucky Mint Juleps, Winner’s Spicy Pecans, and Derby Pie. From the Quarter Horse, Paint, and Appaloosa cowboy west comes Lady Bird’s Texas Beef Chili and other spicy southwest fares. From Austria is famous Sachertorte (Viennese Chocolate Cake) with chocolate glaze, which uses a Devil’s Food cake mix with apricot preserves and apricot liqueur. From Germany is Kris’ Apple Cake made “from scratch,” with white icing. Classics like Irish Coffee from Ireland and Shepherd’s Pie from Great Britain, and Paella, Gazpacho, and Flan from Spain are included with other lesser-known recipes from those countries.

One of the more exotic recipes is from Colombia: a chicken, corn and potato soup called Ajiaco. An exotic dessert from Morocco is called Sahara Pumpkin Pie – so different from our traditional Thanksgiving pie! Also from Morocco is the Casbah Carrot Salad, with a simple marinade of water, sugar, lemon juice, and orange-flower water. Strawberry soup from Ireland makes a great dessert to accompany Irish coffee.
